Cheesecake Roses make excellent decorations for cold dishes, such as this cheesecake. The flowers and petals don't last long, but neither did the cheesecake! To help the flowers last longer:
  • Start with fresh flowers!
  • Gently rinse them in cool water.
  • Handle them gently and avoid bruising the petals.
  • Make sharp, clean cuts on the stems.
  • Refrigerate or keep the flowers cool (not frozen). They will continue to open (and mature) at room temperature.
  • Also consider decorating the cake as close to the event time as possible.

After roasting just put the peppers in a plastic baggy for 5 minutes to rest.
The skin will easily slip off of the pepper once it has rested! If the pepper is spicy consider wearing protective gloves.

Option 1:
Place the fruit in boiling water for 1-3 minutes. The hot water will not reduce the vitamin C but will soften the rind.  Once it has boiled for a few minutes, cut the fruit in half and squeeze the juice through a small tea strainer (which will catch the seeds and pulp). Note: Limes will take only a minute or slightly more because they are typically smaller and thinner skinned.

Option 2: Freeze the fruit and bag when in season. Warm the frozen fruit up as you need it (microwave works great). The fruit will be exceptionally juicy and rind very soft once thawed.
Displaying Electronic Recipes

Make your recipes easier to read by using a recipe holder. Holders will often keep an electronic device at an easy to read angle. 
Electronic devices can be adjusted so that the display is much larger than what might be printed on paper! Take care when touching the device so you don't transfer a sticky mess to your device. 
You can also print out your recipe or part of the recipe. Once I am familiar with a recipe, I often just print the ingredients as a checklist of needed ingredients. K
